If it defaulted to some random cloudy/random wind and baro I wouldn't even notice, mostly.

Yeah, I don't remember the last time I saw the 225@3. I fly mostly in the states and typically sim weather is varying degrees of wrong, sometimes slightly, sometimes wildly, but interestingly the baro is usually pretty close. I also see the sim producing upper level winds, again, sometimes close to real and other times wildly off. That's why I say it kinda works like random weather for me.

I feel for those not even getting random weather, which at least can be interesting. Has to be kinda boring with the same weather everywhere, everyday.

Unlike surface METARS, there is no such thing as “real” upper winds in aviation. Upper winds are not based on real-time observations. All upper winds used in aviation flight planning come from forecast models similar to the one MeteoBlue provides. In the US, the forecast usually comes from the NOAA GFS worldwide model (if you get the forecast from aviationweather.gov). 

In the popular Windy iPhone app, you can choose between four forecast models for the animated wind display: ECMWF, GFS, NAM or ICON if you switch between them while an upper wind animation is active, you will see that each has its own “opinion” on the direction and speed of the upper wind at any given locations.

I always track my flights in MSFS using Foreflight which can give the GFS forecast winds at the aircraft position and altitude. Comparing that to the upper winds injected by live weather they are normally quite close.
