As the title says, how do we set key assignments for the two rotor trims? Or is it included in just "trim"? It is hard not to be MSFS-centric 😄

depended on the aircraft, most of them can use default pitch and roll trim, but some came with it's own command and some with force trim function.

Complementing what @C2615 answered, and regarding simulation of force trim, some example of helicopter addons with specific / customized trim systems are:

Rotorsim EC135: This helicopter has its own built-in force trim simulation, making it a popular choice for realistic helicopter flying;

OH-58D Kiowa Warrior: Available for download and includes force trim features:

HeliTrim Plugin: This plugin can be used with various helicopters in X-Plane 12 to simulate force trim. It allows you to set and release trim, making it easier to fly helicopters with regular, self-centering joysticks :

Force trim, of any kind ( all airplanes where IRL it is used ) isn't natively modelled in X-Plane, nor in MSFS FWIW... 

DCS World does have force trim implementations on it's helicopters  where it exists IRL.

This limitation isn't really a platform systems limitation but rather due to the kind of hardware simmers use, and how difficult it is to properly model the effects of trimming on control surfaces other than in FBW aircraft...

Force Trim shoukd actually BE modelled on the controller side...

If the helicopter is set up to be trimmable (the R22 is not, AFAIR), then the default pitch, roll and yaw trim commands are all you need.
