I have a question regarding the PMDG T7 in PFPX.

 

When creating a profile, there are multiple options: 1 Aux Tank, 3 aux Tanks... How to know which one we have to select?

Depends on how you set your 777 up in the options. I forget what page it is on in the PMDG options but you can switch from no aux tank, 1 or 3, then just select the profile in PFPX

You can setup if the aircraft has AUX tanks or not in the PMDG Setup through the CDU.

I don't believe any airline currently operating the 777LR use the auxiliary fuel tanks.

Different airlines having different configurations for their aircraft. A Boeing 777 is definitely different in terms of options from one airline to another.
