Is there an application that would allow updating ZFW and Fuel from a laptop connected to the FSX machine via fsuipc/widefs ?

Regardless, one cannot set weights and balance including fuel in the FSX variables either directly or via poking with fsuipc.

Currently, no. In the future, you will be able to run our aircraft on multiple computers across a network (to include the FMS, so you'd be able to update it that way), starting with the upcoming 747. It is anticipated that this functionality will be moved back into the 777 and 737, but there is no timeline on that at the moment.

You should be able to do it with the (modestly priced) payware Remote CDU while waiting for the new 747 and added 777 & 737 functionality.  It has its own network connection program and AFAIK doesn't use FSUIPC.
