Is the standard non virtual cockpit view available in 2020 like FSX? If yes, what is it called?

No I don't believe there is.

there is a way to disable the VC completely by manually disable some config files in the airplane folder, i just lost the link with the description how to, will search for it...

With the setup you loose all weather fx tho, like rain because there is no cockpit, no windshield.

EDIT: "In the sim objects folder you can comment out the model of the VC and you then have the required view for the home cockpit.

Some aircraft take more fiddling than others as the external model is also part of the VC view. But there is a model.cfg which allows you to turn features on and off."

I liked the 2D cockpit views also.  In this sim, you can select a set of instrument views that slew and focus on different clusters of instruments.  I think that will be useful for IFR flying.
