There are still quite a few -700s in use but I'd say the majority are -900s. Nobody in the US that I know of uses the -1000. Thankfully the -200s will be completely gone in the next few years 😅. Feels like maybe a bit less performance in the 900/1000 when loaded up ? In cockpit not a lot to say really, FMS seems the same. Does let you carry more passengers in virtual economy stuff. The 900/1000 has some nice liveries. I did get a pressure diff warning in the 1000 even though I had bleed set and both packs on but that may have been pilot error. Might have been climbing to fast and the cabin pressure may not have been able to keep up, which would cause a differential pressure caution. Recommended rate of climb IRL above 30.000ft not too much more than 1500fpm for longer periods.
