However, there would be nothing stopping me using the phone in a basic fashion.

Yes, my iPhone has more features than I can count.  But I only use it as a telephone.  When I was first got it Betty and I were still hiking and I got national forest maps for the GPS which I used on the trail.  But I don't use it anymore.

Also, I never got into the habit of carrying the phone around with me wherever I went.  It just sits on my desk.

The tires are worn.  The shocks are shot.  The steering is wobbly.  But the engine still runs fine.

I remember the days when cell phones didn't exist, as you do, and if there was any kind of emergency when out you had to attempt to find a phone box. So yes, I always go out with my phone. I think if we have that facility available for emergencies its prudent to make use of it. If you have a car accident a phone is a rather valuable thing to have. There are just too many eventualities where a phone would be useful, to not bother to take it out with you I would say.

If I have a car accident there is a button on the rood of my car I can push and my Toyota Care Plus plan operator comes on and asks what the problem is.  I can tell her if I had an accident or need roadside assistance or a flat tire changed or anything else.

I have never even looked at her phone.  Perhaps they do have that stuff but all she uses it for is telephone calls.  If I get flip phone that's all I'd use it for.  That's all I use my iPhone for.  I did get a GPS app for it several years ago when we were still hiking in the mountains.

I'm thinking now along the lines of a landline maybe.

The Jitterbug (they changed the name to Lively). Flip. Small. No internet. I saw on youtube where a guy closed the lid and ran over it with his car. It still worked fine. It does have one button dedicated to emergency (if you want to pay extra for that emergency service subscription). Our bill is under $30 a month for 2 phones. It does do text, which is an extra $3 a month.

How old is your car? Many Toyota models up to 2019 will be losing access to that functionality.

Mine is a 2019.  The link said Toyota Prius up to 2016 is affected so I guess mine is OK.
