On the bar at the top-right of the menu home page 🙂

Click on your sim name/avitar in the upper right of the MSFS2024 home screen, a new window will open, click on Customize Identity, a new window will open, select Co-Pilot and a window with co-pilot options (characters) will open, select the option with no character shown.

Found it. Customize Identity. However on the Co-Pilots box it will not let me untick the box. It seems I will always be stuck with a Co-Pilot ?

You don't need to 'untick' the box. As ark says, just click on the box with no character shown.
