Under the control section, I have created a few new profiles for some airplanes. When I try to delete something other than the default, I select the item to delete, click delete, and it still appears on the list. Any help is appreciated.

After any changes, being it deletes, edits or creations, are you Saving / Applying it when you leave the Controls menu?

I can't believe this. During all this time, ASOBO still hasn't fixed this issue. 
After so many searches, including their forum, I came to the following resolution:
1. Delete the unwanted profile.
2. Fully quit MSFS2024 to the desktop.
3. Restart the simulator.
Apparently, they have an issue understanding this delete. So ridiculous.
Also, use the "Create" command for a new, empty profile instead of "Duplicate". "Duplicate" may cause save issues.
Top-notch programmers with lots of logic.

French are specialized in making complex any simple process, instrument, machine, program...

Well, but I always give them the benefit of doubt for two reasons, one being the "Croissant" the other I can't write here at a public forum, other than the termination : "[...]  vive la France !!!!" 🙂

Nice one. 
There are so many annoying bugs compared to MSFS2020; it seems they have let go of the previous skilled programmers. It's a total mess in some areas.

I learned this just the other day.  IGNORE the retained, deleted, profile as it will be gone when the game is reinitialized.   Minor annoyance is all it is...but agreed, odd it's been ignored.  SU3 here.  As well, Specific to plane profiles don't work in SU3 but apparently might in SU4.

You see, I try to overlook some issues, but it's very hard to consistently spot those "minor" ones. There are already way too many. Oh, did you read anywhere that this might be fixed in SU4? Or maybe you're hoping, like I am.

Nothing to overlook there as you know, it's just something that passed by the awareness of whomever was overseeing this component.  I tend to look at the forest more than try to look for bum trees in fact I'm focused so much on my routine use patterns it keeps me from perhaps noticing some of the 'way too many' you reference.  And the forest is, on the whole from my POV, just awesome, still, thousands of hours later!  Chat GPT *thought* SU4 will be addressing this, which may be an awesome hallucination, or some truth to it:

"In contrast, the SU4 beta (and newer builds) adds:

  • Full “Specific aircraft” support — the dropdown list of actual airframes,

  • Proper inheritance (you can base a plane-specific profile off a category profile),

  • “Assign existing profile” and more consistent gear icon behavior."

Might be better to follow some good tutorials on YT that show you how to make, save and upload profiles. 

It was frustrating at launch but overall its better. Cut yourself some slack and follow the tutorials.
