I had to record my own audio of the 737 Cockpit ambient sound. It seems that from within FSX, while you can turn up or down the engine noise, cockpit switches, and environment, you cannot adjust the volume the file that is called '737 Cockpit'. Because I have turned down all the sounds in FSX but can still hear the loud noise of either the APU or Packs...

 

Also, are there newer soundsets for the 737-800?

The 737 (as is true with the 727 as well) is a very loud aircraft up front.  The main sources of noise are the packs and, quite simply, the wind rushing by the window and body structure.  The way the nose is shaped is one of the biggest producers of noise.  It's true to the plane as it is.  You may not like it, but it doesn't mean it's not right like that.

If you're going for realism by doing that, you're doing it wrong. 

 

Otherwise ambient sound can be changed in the FMC as rsvit said.

Clearly you have never sat in the cockpit of one in flight. It's a loud airplane.

Our newer airplanes have vortex generators installed just in front of the windshields to reduce airflow noise. The eyebrow windows are not installed the newer jets as well. Both of those changes make for a noticeable reduction in the noise level.

Trust me, most of the cockpits are much louder than the cabin behind, which is due to the packs and other cooling equipment.

 

As for the NG - try turning off the right RECIRC FAN, that reduces the noise quite a bit.

Yeah, just flip the recirc fan switch(es) off. It is a real world practical use to reduce the noise, allthough it increases the load on the packs, so I tend to leave them on in RW.

The 737 flightdeck is "quite loud" in real life. Having had talks and discussions up front more times than I can remember, this seems to be recurring: without headset on, the most commonly used word is, without doubt, "What?".
