I think I now the answer now. I just did some tests and though about what changed since I got the issue. 2 things come to mind: Buying the Fenix A320 and G-Sim Kneeboard. As it doesn't happen always (but often) troubleshooting isn't easy. I deactivated all addons and got in a parking spot I had the issue 2 times in row now as I got the Fenix set up for a flight. 

I used the default 787, to still have an airliner and sat at the parking spot. The first time without anything. After about 20 minutes my VRAM usage was about 3-4 GB. Then I activated kneeboard and did the same. The VRAM usage slowly climbed to 6Gb , stayed there for a few minutes and then got up to 7,5 gb, where I decided I have seen enough. The I repeated the first try again After about half an hour I sit at 3gb VRAM. 

I cannot be 100% sure though 3 exampled, but I think is it pretty clear the G-Sim Kneeboard is the most likely culprit, since it also matched when the issue happened the first time 100% 
I already messaged the dev on Discord and hope he can find the issue asap when he reads it. 

Only solution when this is happening is to turn down some of the more resource hungry grapgics settings in msfs   Render scale and LODs in the main.  I'm using a few massive photogrammetry addons and have had to do this to allow them to work smoothly.  Running at 1080 I never had any issues, but once I moved up to 1440 I had to turn a few settings down.

Starting with default nvidia and msfs settings for your system is a good way to go and crank them up gradually until you reach the limits of stability.

See what I read above. I actually lowered my settings because of this issue with no effect at all. As soon as I removed G-Sim Kneeboard the issue was gone completely. A 3080 has 10gb of VRAM. This is still pretty limited but cannot be realistically filled with high settings @3440x1440 on a default plane in an area that is basically deserted. 

I remember a year ago, when the sim was beautiful and I was so incredibly happy I finally had a sim where I didn't have to do all these performance tweaks. Feels like, nowadays, thats all I'm doing. I have a mid-to high end system and I just don't get the performance degradation after these sim updates. The stutters and having to lower settings way down to get a decent flight is maddening because before all my sliders were on ultra and there were no problems. 

I don't want to come across as bashing this sim. I absolutely love this platform and I can't wait to see where it goes. I also know they are trying to work out kinks and thats totally understandable. All I'm saying is I miss the platform like it was a year ago in terms of overall smoothness. I know we've gotten tons of advancements and the sim is growing with features and fixes, it just feels like sometimes the performance is going backwards.

A year ago it was a mainly VFR, low altitude GA aircraft short flight duration sim. Now its showing it's guts with sophisticated long distance Commercial aircraft.

I wonder why.  The sim performs essentially identically to what it did a year ago for me, and I have only smooth flights in and out of all airports, and all settings are on Ultra.  The only variable I change is Terrain LOD because in my moderately high end system it's the CPU that bogs down.  I've become good at estimating what the load will be at the arrival airport.  On very modest arrival settings I might be at T-LOD 300 or even 400, but on complex airports like KJFK, FSDT's KORD, EDDF I know I'll need to turn that down to as low as 120.  O-LOD always sits at 200.  I'm only using the B78X HD and AS CRJ.  I spend no time tweaking other than setting the T-LOD during flight setup.  If anything performance is best ever for me now and the support for that comes from where I need to set T-LOD now versus a year ago or so.  Same sim.
