I'm guessing you go straight through animals just like planes and other humans, but it would be cool if they add collision detection as some point, the same as buildings and trees (and if they add birds, engine-outs if they hit the propeller or get sucked into the turbine would be cool). I remember an old FS2004 (or maybe it was FSX) mission where you fly IFR into some airport in Alaska, and just as you break through the clouds at minimums there is a BEAR in the middle of the runway and you need to fly a missed approach. One of my most memorable MSFS experiences for sure!

There is a free roaming wildlife park in the area, but that's about 25 KM's away. 😉
