If you go to this link

and scroll to the bottom it explains the 3 versions, I am using 'Unstable Master Branch Build (with custom FBW)' and it seems to be working very well with the latest FS2020 update.

The master branch dev build custom FBW is very usable with the stated caveats.  The FD needles have an attitude (pun intended).  They dont show visually your course corrections, but the main thing is the AP does it right. Right now in my flight the ND was frozen in time, and just happen to press CSTR off and it came back to life oddly enough.   That said, I dont want to use the other versions just because the FBW hand flies so beautifully. Just hoping they can incorporate an option in the installer for this particular version, otherwise will just continue to download the current one every couple days.

Edit: ND partially frozen with a red upper ring on it. Cant seem to get it to redraw.   The redraw stopped working, but WX, chrono still working. I have no doubt that will be ironed out soon enough.   Just dont fly into MMMX when it happens.  Going to test my situational awareness first hand.

How does the experience differ between custom FBW (not the mod, the system) and default?

Personally I'm already quite happy with the changes they made to the flight model. I think the take-off behaves more realistic than in some payware.

Default as in default MSFS A320 or the stable version?   If you dont want much issues at all, get the stable version. The custom FBW is nice to handfly but the AP wont use it because the FD is not working properly in that version.

This update as just caused CTD's as I click ready to fly or on the landing challange it says 'one or more items are missing. Go to the content manager to download them.' There is nothing to install. It was working fine till I updated. Any help?

It has been published that landing challenge does not work in the FBW modded 320.

If you remove the mod from the Com folder then it will work again.

Merry X-mas and enjoy.
