Do not own one or have a pre-release game - but in the streams I have watched the Series S looks like roughly medium settings with a few things high and some on low, more or less, my guess is the sort of performance you might see on maybe an i3 with a 1050ti ? Hard to say especially with the current streams being a prelease version. The Xbox X seems more like mainly high settings. The clouds are definitely more medium or high not Ultra. My hunch is clouds are closer to medium on the X. The LOD seems poor as well. Some other aspects like the lighting are surprisingly good. Again hard to say, once more people can get their hands on these things we may get more information. The most likely scenario is the XBox X will be approaching or better than Ultra in some areas where the XBox shines and be more like medium in other areas where it struggles. We need to wait and see.
