Weather/Wind not representative

What's improved on your end? If so, that's great! However, I've flown a ton in the su8 beta and haven't seen any improvements. Gusts are completely missing as is any sort of cloud turbulence we used to have. Other than guaranteed mechanical turbulence over mountains that seems more like a simple equation opposed to a dynamic situation, nothing has improved on my end with su8

same on my side with SU8. Over mountains yes, but anything else is missing.. But i have to say that i only fly the FBW320 so maybe it has smtg. to do with it ?

Meh, don't believe everything you read on this sub-forum.

Some people will tell you everything is perfect with the sim or is fixed in the latest beta, others will tell you everything is broken.
There are agendas at play.

A few days / week ago someone posted about the presence of huge trbulence even when cruising at FL380 / FL390 over mountainous regions.

I experienced the effect a few times when overflying mountain ranges. It looked to me as overdone.

Weather is stil WIP in MFS, but overall it looks acceptable to me.

I only fly GA or twins and I have noticed the aircraft react when entering clouds   Weather has still a long way to go though.

Absolutely.  No doubt there will be some surprises with XP12.

I have noticed that if I press reset flight plan in the world map, I often get a different wind direction with Live Weather, if I do not do that, I get the same wind direction as I had on my previous flight, has anyone else noticed this?

I'd be surprised if weather simulation is not far advanced in XP-12 as XP has had decades of development under its belt for all aspects of the sim including winds and weather.  Hopefully the volumetric clouds I've seen in the various previews I've seen do not represent what XP-12 will look like upon release.  From what I've seen in previews, MSFS's current clouds and weather looked vastly better, but as I say they are just previews.  I have not heard when XP-12 is supposed to debut, but if it's still months out then I would think there is a good chance MSFS weather depiction will have evolved considerably more.

If I was at home I would have gladly taken a vid of me pointing my plane to a nasty looking cloud so you could see it bucking like a bronco once it enters it. I find it strange that there are people not experiencing cloud turbulence in the beta at the very least.
