Try opening Microsoft Store and update everything whether you think you need it or not.

I would also remove any add-ons for a moment, especially add-on liveries, and see what you get.  Liveries and aircraft mods (until updated) can be the first items to cause issues after a sim update.

installed the beta but for ex. in the tbm still no instruments...

I remember to once have downloaded some G3000 but cannot find it anymore. Where are the addons? Simply delete?

start with a clean community folder, G1000/G3000 were updated by WT lately and integrated into MSFS, anything related to that from the past in your community folder will mess things up.

moved the community folder to desktop and now msfs crashes at every startup upon clicking on select flight.

forgot where, is that folder path correct to move back the community folder?

No need to move it - ever.  Just move it back into the MSFS2020 folder next to the 'official' folder, and rename it 'xCommunity'.  or something like that - takes just a second, and easy to enable it again by simply removing the 'x'.  MSFS will simply not look in there with the 'x' in front.

You should also be getting the 'start in safe mode?' message every time you start up after a crash.  Do you click on this as you should after a crash?
Selecting that is the same as having an empty Community folder, as it will then only load from the official folder and completely ignore the community folder, so handy for bug / incompatible add on tracing.

I must admit, your issues do sound like a bigger problem.  You say planes without cockpits...  Which ones?  Add on planes?  If in doubt, try loading the default Cessna 172 first, there should be no problems with that unless there is a corrupt installation or parts of the MSFS files are missing for some strange reason.

I like to trick airline passengers into thinking I have my own swimming pool in my back yard by painting a large blue rectangle on my patio.

Intel 14900K in a Z790 motherboard with water cooling, RTX 4080, 32 GB 6000 CL30 DDR5 RAM, W11 and MSFS on Samsung 980 Pro NVME SSD's.  Core Isolation Off, Game Mode Off.

Exactly how long has it been since you last used MSFS? There have been several simulator and world updates since last July (I just picked then since to me, "a while" is about 6 months). To be honest, your best option is probably uninstall, and reinstall. In the end, that's most likely to be the easiest and most reliable. 

I think whatever version you have installed is just getting confused by the changes in the server for the newer version the rest of us are using. 

If you start the Xbox app, click "My Library" on the left side, then "Manage Installs" at the top right, then the "Manage" button by MSFS, then the "Files" tab at the top, you can try the "Verify and Repair" option at the bottom. 

Try deleting the sceneryindexes from C:\Users\Michael\AppData\Local\Packages\Microsoft.FlightSimulator_8wekyb3d8bbwe\LocalCache\SceneryIndexes to see if the sim will start.

I think you are running an outdated TBM mod. Losing cockpit was a symptom. Delete any mod you have in Community for the TBM.
