use the VATSIM network. more ATC and a little more regulated than Gamespy. 

Or IVAO - they have the same origin but follow different philosophies (especial for atc). On VATSIM you first have to meet with your mentor and do some theoretical and practical work with him (or her) before you can control on an airport. On IVAO you have to learn yourself by reading and controling on an airport. Then you can request trainings and then your exam. If you pass that exam, you are allowed to use the higher station for learning purpose.

BVATC is very good platform as well.  With Flightdesk and LiveAtis.

Multi crew would be amazing. Was really disappointed when the ngx came out without it. But no to worry. Maybe one day.

I'd use the default Boeing ones and it would be a bit of a casual environment.

If you want ATC and real rules for simmer flight, use VATSIM or IVAO network.

If you want a multiplayer sesion, you can use a HAMACHI net, its easy and friendly to use.
