I can't see any other 787 airplane except the one I'm flying. I have the premium deluxe edition and play with offline (computer generated) traffic. I don't see any other 787 anywhere, neither flying nor in the airports. I see a lot of A320 and quite a few 747, but weirdly enough no 787. Is this just me or a known bug, do you see 787's in your game?

I haven't.  Though I started up at Dubai last night and was sitting next to what seemed to be an AI version of an A380 (4 engines, full double decker, AI livery and lower  model quality).  Sometimes 3rd party liveries will add an AI version but I'm not sure if the 787 allows that since stuff is all encrypted.  I checked a few of the livery megapack ones I have and none had an AI version so far.

I haven't either, all I see are A320's.

A320's, A380's only on aprons...I think there is a static that's supposed to be a 787, but it's a very poor rendition... too long and big for a A320

I saw something that resembled an A340 single decker 4 engines.

And something resembling a 767 and/or  A300 short fuselage two engines...but nothing resembling a787/A350 type.

Even the GA aircraft are all slightly off (probably licensing issue) I see a lot in of “Pipeech” or “Bepiper” looking GA aircraft out there too...

I can't wait until we have an official AI Traffic addon for MSFS to make the airports really come to life. Tired of seeing just A320's with default liveries and not much activity going on, even with live traffic enabled.

Although flying GA into smaller airports helps my comment on GA hybrids not withstanding

Perhaps it depends on your settings and where you are flying. I have seen many large airports, JFK, or KSEA  for instance, that with the combination of Multiplayer traffic are in fact very busy, for me at least, to the point where I have occasionally hopped out of my plane and spent quite some time wandering around the vicinity and watching all the action.

I know for me I don't want players in my session, there is nothing more immersion breaking than some kid acting a fool. I prefer AI traffic that does its own thing and stays on a schedule. Plus from what I understand players don't share the same ATC

Really? I would love to do that too, but I haven't seen much action unfortunately. 😞 Would love to do some plane spotting though.

Try finding an active B78X flight on flight aware and go there in the sim.

Though some times flights can be 10 or more minutes behind then what's on FW so you might have to go searching.

Make sure you have Live Traffic turned on, not just the basic AI traffic.  You should see a ton of traffic then.  I swapped to that from the basic AI and during busy times at big airports you'll see stuff taking off and landing.  I found the basic AI traffic useless and a massive performance hog compared to Live Traffic for some reason.  Swapping to Live from AI set to 15/15 (commercial/GA) I gained a solid reproducible 4-5fps while sitting in the upper 30's-40's at EGLL with the Rain preset weather and the 787 which is a big FPS hit already in that situation.  Disclaimer - that was shortly after launch so I don't know if AI traffic performance has been increased, but at least back then Live seemed to give tons more traffic and maybe 1fps vs disabled traffic altogether for me.

This was KGEG the other night (Spokane) with me waiting to line up, Skywest flight just landed, another behind me waiting to take off as well.  Unfortunately the one that landed bugged out and stopped taxiing completely.  After 5 minutes I had to temporarily shut off traffic so I could depart.

edit:  also in general I think there's just not as much activity right now due to Covid.  Though I do hear a good bit of chatter on default ATC as well from the Live Traffic stuff.
