I don't know why you are not able to link it.

When you mount the drives in Ubuntu File Manager , does it display the mount drive name ? like /dev/sda1 , sda2 ? if you see those drives , then double click any of them and see what the content is , once you know the content and which drive you need to link then it will be very simple. Will type it again .....

e.g. /dev/sda2 (IF THIS IS YOUR WINDOWS XP DRIVE)  

ln -s /media/username/sda2/X-plane/Custom Scenery  /home/X-Plane/     that's about it nothing more to do. 

so try to follow this you should be up with XP looking like a 2021 sim
