...how aggressive are RW pilots adjusting elevator trim say on a SID demanding a 180 degree turn immediately after takeoff and otherwise? Is it more common to keep hands off elevator trim until you're pretty much stable on your ascent step then fine tune elevator trim?

The main trim switches are on the yoke for reasons.

But well, every pilot have their own habit

The take off trim setting should be correct for your initial climb speed of V2+15-25, after that trim as and when needed to keep in trim, obviously as you accelerate and raise flaps you’ll be busy with the trim.

The 747-400 for example has a system that will automatically change trim as the aircraft accelerates if you just leave it alone, manually trimming will cancel this system however.

Previously 24 years on 747-400.Technical advisor on PMDG 747 legacy versions QOTS 1 , FS9 and Aerowinx PS1.

Same on 737NG when flying manually.  The Speed trim system (STS).

You will notice if it's active due to the much faster movement of the trim wheel (sounds almost like a stab trim runaway)

To be honest not very many real world 747 pilots are even aware of it,

There’s only a small reference to it in the modern manuals, back when I started on the 744 we used to get the big A4 sized manuals with a lot more detail , it’s only need to know stuff nowadays.
