Not really. They have been consistently upgraded to reach the same level in terms of add-on features and it has recently been achieved.
So the main differences at the moment are the different size and performance characteristics you mentioned yourself and the question is if you care about fying them all. I do.

Talking of range on the 319/320/321 I shall never forget at easyjet the 'oh so clever' 22 year old graduates from UCL or Cranfield with their degree in airline management asking us 'thicko's in OCC'  why the a319 couldn't do a Manchester to Paphos, only for us to tell them, 'oh it will do it son, but you do want to leave behind, the bags or the punters'

I’m not really interested in the A319 because it’s not THAT different from the 320.

I absolutely love the 321, though, because it comes with its own challenges. It doesn’t climb out as well, can really feel heavy.
You also often need to pay attention to flaps on climb-out when heavy because green dot speed can be above the flaps 1 limit so you wait for the auto-retraction of the flaps and keep going with just slats until you’re fast enough. 

And you really need to manage your speed during the descent. Not that easy to slow it down between 250 and 220 knots when you can start using flaps.

But the performance on the a319 is awesome. You can do short strips

Short trips. Absolutely. I was meaning short strips for the a319 as in short runways
