When setting up the flight I use the right FMC for loading fuel, passenger’s, ground services etc and the left FMC for configuring the flight all on the same tablet and by touching a certain point on the screen you can switch between the two. Then I quit the process manager. Like you I found MSFS doesn’t like it if you make changes to the affinity before it’s fully loaded. I use a script to start whichever addons I need, fire up MSFS from the reshade bat get to the gate then load the process manager once at the gate. MSFS crashes to desktop if I try to start it with the affinity changed. Basically I wait until MSFS has loaded to the menu before I change core affinities.
