Oh My God...GOING THE OPPOSITE WAY!  

I'm not up to cooking from scratch yet so I'm eating frozen dinners.

Tonight I took out a Banquest salisbury steak.  Now Salisbury steaks are supposed to be made of ground BEEF.

But the Banquet frozen dinner Salisbury steaks are made of CHICKEN - PORK and BEEF according to the label.  

It's in the oven now I'll let you now how it tastes in the morning.

Well, Dugald, it tasted terrible.  The so called Salisbury steak was soft and mushy.  I only ate a small portion of it.  The potatoes and corn were pretty good.

Betty and I used to split a Hungryman frozen dinner once a week.  Their Salisbury steak was all beef and firm.  I still have some in the freezer.  I'm going to go with those from now on.  I'll eat half one night and heat up the other half the following night.  I also like the Marie Calander's frozen chicken pot pies.  The chunks of chicken are real.

I've found all of the Marie Calander's offerings to be good. They used to have a meal with an oven-roasted leg and thigh, mashed potatoes and sweet corn. It was always delicious! Sadly, they must have discontinued it several years ago.

I would watch the sales and stock up on Marie Calander meals when they dropped to $1.79 each. Oddly enough, now that I seem to have nothing but time, I'm back to doing my own cooking again.

Tonight, I'm fixing yellow rice, stewed tomatoes and chicken legs. Knorr yellow rice mix, one can stewed tomatoes and two chicken legs, slowly cooked covered in a 12" skillet on medium heat for around 30 minutes. Delicious!

Fr Bill, I like Zatarain's long grain and wild rice.  I fry chopped peers, mushrooms and onions in olive oil and butter.  Then I add the cooked rice and fry it some more add shrimp during the last three or four minutes.

I like to cook.  Betty and I shared the cooking.  But for a while I've lost the desire and am sticking to easy stuff like frozen dinners.  I'm sure it will pass and I'll start in again.

It might not happen automatically. You might have to force yourself. Cooking for one is very limiting so, where possible, I cook enough for four and freeze three individual portions for the future.

Dugald, I have a freezer full of stuff I cooked for Betty and I.  Spaghetti sauce, chili, fried rice and shrimp, Jumbalaya, meat loaf, and more.  But for now I'm just going with what I can microwave.
