Next to the Isolation Valves there are two Switches.

"L PACK" & "R PACK"

is it safe turning them off after I started the engines?

Do I really need those Packs on the entire flight?

they are very noisy must I say.

They are needed for pressurization and aircondition. So, you'll need those PACKs on the entire flight.

In FSX are useless, in the real one are something vital if you want to climb over 14000ft (and also below as they will replace old air with new one).

Basically they are devices that uses hot ait from engine or apu bleeds, cool it (as required) and pump it into the cabin.

The pressurization system controls an outflow valve that will exhaust excedance air.

 

If you require extra power from the engines, you could turn them off for the take off. Remember to put them back to ON

The cabin altitude warning horn which will eventually sound if you don't use the packs above 10,000 feet is much louder!

Yup and at 14000' the masks in the cabin will drop down. ;-)

Yup! That sound, to me, is probably more annoying than the lady saying "Autopilot" in the MD-11 (That's if you don't know how to turn it off :Just Kidding:)

You could. But if it's a silent cockpit your after, you should just turn off the engines. ;)

It's not entirely silent till you turn off the battery and standby power too :P

no its still not silent since you still be hearing your heartbeat since you got no engines and going down in flames. Tis silent when you hit the ground

You can also just disable those specific sounds in the sound folder, so you still have them on but you can hear again :-)
