Because assault isn't a federal crime, but interference with a crew member using a dangerous weapon is.  The teeth on that federal felony charge are a lot bigger than your run-of-the-mill state assault charge, and in federal court being prosecuted by the regional US Attorney.  Conviction on that federal charge carries up to a life sentence.  https://www.law.cornell.edu/uscode/text/49/46504

It's  a sign of the times. You used to be able to find magazines with stories of the Old West in magazine racks in supermarkets. These racks don't seem to be there anymore. Anyway I never read a story about someone shooting up a schoolroom full of kids back in those wild and wooly days. That sort of thing would be just too over the top to every occur. There were shooting for angry grudges and money, but not for senseless reasons.

The man was a first-class idiot to begin with. There are thousands of pounds of pressure holding the emergency exit doors closed. They can only be opened after the cabin has been de-pressurized.

Based on design, for example 737's overwing exit is not locked by pressure but electronically when above 80kts.
