Cabins won't be customized to VIP config but can easily model that in a Simbrief profile. Data points on the dutch one are widely/publicly available (e.g., seat config)

The 100 can take up to 40 mins to get to cruise, particularly in hot and high ops. F70 a more nimble aircraft due to the size as you mentioned.
