Is MSFS2020 32bit or 64bit?

it's based on FSX, ergo it's 32 bit.

If everyone can just wait a bit, I'm sure we'll have a bigger byte of items included as they have currently just given us a nibble.

Having a look in task manager it seems most tasks use between one and several hundred MB.

Tasks requiring access to a 64 bit address space are fewer, but it still makes sense to make all software 64 bit to avoid being left out in 32 bit world. That's probably not going to happen very quickly in Windows.

Although 32 bit apps can make use of around 3GB directly addressed, the operating system has memory paging which can extend the use of memory to hundreds of GB for some programs perhaps databases for example.

When a program is presented as 64 bit then plug ins are also 64 bit. However some programs can make use of a x64 bridge, privately written to handle 64 bit tasks, so the main program can remain 32 bit for the time being.
