Try changing your sensitivity settings in MSFS (Axis X) for your controller's roll axis to -20 for both Sensitivity and -20 again for Reactivity. Adjust these values up or down according to your taste.

Edit: Please disregard the following. As @Donstim has pointed out to me, the A320 is not a Part 23 aircraft but a Part 25 aircraft, for which there is no specific roll rate requirement.

it's not a sensitivy problem because the last patch changed something in the FM, in a sort of "F16 effect". It's difficult to explain I'll take a video to show what I mean.

Agreed-  just flew the 320 yesterday after I updated it and flew two flights with it the day before prior to updating it-  I’d be making things up if I told you I could tell the difference.  The airplane is, and continues to be, the most enjoyable, stable and reliable airplane I’ve ever flown in a flight simulator.  That’s good enough for me!

This is my video on the rolling problem I'm seeing on the Fenix A320, it is not a roll rate problem but it's there when the roll stops. You can compare what happens with the FBW A320 at 7.35min where you can see smoother rolling stops, similar to before patch Fenix A320. In the video my joystick has the same default settings for both the airplanes, it's not a problem of joystick settings. At this moment the Fenix is slightly fying on the rails on this aspect and I don't like it. The video was realized flying the A320s manually and rolling slightly left and right to show the problem.

Some livery issue that I haven't seen before. It's a default Air France livery.

EDIT: Just saw that there's an update in the livery manager. This will (hopefully) resolve the issue).

flying  the  fenix  now, on climb manually flying  if  i turn  left  or  right   and  once in the  turn if  i let  go off  the  joystick  the  fenix  will  not  bank  any more  same  as  in  climb

It's a GSX issue, not a livery issue.
