From a consumer point of view, an "Early Access" product should be a release candidate or at least a late beta. Earlier versions like alpha products are not ready to be "consumed". They exist for testing purposes.

This Jetstar doesn't have working overhead switches, engine management etc. Even the engines need to be started with ctrl-E. It would not be a satisfactory experience for me  to fly this thing in its current state.

The only reason to buy it in early access now is to get it cheaper now rather than pay the full price once it is finished, at the risk it will never be finished.
You are missing out on the first WOW effect when buying a partly finished product though. By the time the product is finished from an alpha state you've dealt with the bugs, the missing features, placeholders and lowres textures.
Chances are the novelty has worn off and you are already bored with the aircraft by the time the regular customers get to enjoy the new aircraft in its full glory. You are are ready to explore the next "early access" product.

Fair point, but consumer protection laws are pretty much non-existent in software anyway. After all, we don't own the software we buy, we're granted a (revokable) license to it. If we complain and the company doesn't want to deal with us, they can pull our access entirely with no consequences.

Yes they can but they DO have to refund full purchase price if they do that. As long as they still exist as a business entity that is.

They have to, but in practice almost never do (in the US, at least).

Then ultimately it's not a product for you yet (and it's not complete enough for me either).
But other people clearly feel differently and as long as the dev has accurately reflected the status of the aircraft I'm of the opinion those people can make a choice for themselves.

Certainly, from a visual perspective this is not good at all. Might have looked good in FSX but not now.
