I really don't think it's because of anything else I've done on my side. 

I can't even go back to a pre 22h2 install of Win 11, because the image being offered with the Media Creation Tool is now 22h2.

Are you definitely sure you're stopping the Holographic Shell? As what you're describing is what that causes, double check.

If you are within 10 days you can roll back. Also check out this video I posted

Setting the roll back period to 60 days sounded exciting, but it wouldn't work for me.

After all the dev versions I had installed by now, I'm probably too far down the rabbit hole to come back.

The annoying thing is that now I have to rely on installing some dodgy Win version off the net, as I can't find any official way to install pre 22h2 Win11.

Have you tried a fresh install?

I literally just did the update, I did make a backup image first with Macrium just in case. All works without issues and I am just testing the Fenix out. The sim looks fine, no stuttering or any issues I can see right now.

It looks like doing a complete re-install is the last thing I could try.

It always takes hours to have everything installed again, and without any guarantee of success that FS & VR will work this time, it's really annoying.

Have you tried removing WMR and any other VR related software/drivers from your system and reinstalling those?

Malware scan? Virus scan? Could be anything, I'd still double check you're properly stopping HolographicShell before any of those though just to be 100% sure.

Yes, removed and reinstalled WMR and Steam VR as well (to be safe, though I'm playing FS through Marketplace). Don't have anything else.

It doubt I have viruses/malware, whose only effect are to disrupt FS on VR. I've stopped HolographicShell enough times now to know it doesn't make a difference.

If it is any help download and install the free version of Macrium Reflect for home use before you do anything drastic.

After installing it create a USB rescue disk and then boot from that to create a complete system image of your Windows drive on another HDD or USB drive. You can then re install windows 11 from scratch and having the rescue USB you can always go back to your current version very easily. I have been using Macrium for years and make a new image on a weekly basis and before every major update. Also what I found  useful when I was getting ready to build my new PC recently was create a Google sheets file listing all the various steps I needed to do when re installing  Windows, drivers and software. It can help immensely in the future. Again though using Macrium I always get a new Windows installation completed with all drivers and updates then create an image. In the folder I store them in on my backup drive I have a simple text file that I use to log what each backup is. You can then do the same once you have a basic working MSFS 2020. I tend to keep 3 current images. 

I would suggest you do a fresh Windows 11 install with complete drivers & updates then a basic MSFS install and see where you are at

After a complete new Windows 11 installation, with all the dev previews, FS is finally working normal again.

Still angry that I had to go through all this though. That's a few hours of my life I won't be getting back.

I ended up doing a clean install since my system had some issues including 2 x EFI partitions that I couldn't get rid of without a re-format (it's a long story which I won't go into here). It's certainly a nuisance having to setup up all your stuff again but FS2020 was relatively painless to get going again since the bulk of it was installed to a different SSD. I'd highly recommend setting up the sim on a different drive if possible.

This time I'm staying away from Windows dev previews- it seems to lead to a system that eventually becomes unstable, and you end up wasting hours trying to troubleshoot.

Make an image of your working system with Macrium Reflect. You will be thankful you did one day. It is a good habit of getting into

The more I read about Windows 11 and MSFS 2020, the more I am absolutely convinced to stick with Windows 10 for as long as possible (3 years). I have seen no reason whatsoever to upgrade now, that makes any sense to me. Even if I have to deal with it eventually, at least I can keep flying for now -- much preferable to the nightmares I have seen described on this thread. And there is always the chance that the Win 11 problem will be fixed by then. To me this is a no-brainer.

After any update to Windows I always run in a command prompt with admin rights...

Dism.exe /online /Cleanup-Image /checkhealth

Dism.exe /online /Cleanup-Image /scanhealth

Dism.exe /online /Cleanup-Image /Restorehealth

sfc /scannow

Dism.exe /Online /Cleanup-Image /AnalyzeComponentStore

Dism.exe /Online /Cleanup-Image /StartComponentCleanup

RESTART your computer as the last step. Then go for a test flight.

I fly everyday with Windows 11 Pro,

Zero issues whatsoever. Just upgraded to 22H2 a couple of days ago and not a single problem.
