I am currently using the standard version of msfs - steam version. The upgrade is available on steam but my question is:  Do I have to uninstall my current version and then install the new version OR will the new version just load over and add to the current standard version?

It will load over.  No need to reinstall

In my case MS marketplace I went from Standard to Premium Delux and the upgrade happened without having to uninstall.

Negative, there's an upgrade price, but it's bigger than the net difference between the base Standard and Premium Deluxe....  Still worth the upgrade though, IMO...

Can you point out where the upgrade option is located on steam? All I see is the Premium Deluxe version for $179.95 (australian dollars). I'm pretty sure that's full price.

Sorry, I cannot. I am on the store edition and for that one your can find the upgrades in Market Place. I just took a look. Upgrade from Standard to Premium is "only" $99. Not an option for me 🙂

There are no upgrades on Steam, the upgrade is done in the marketplace.

And to get it all, you only need one upgrade, not two (if you have the standard edition right now). i.e. the Premium upgrade includes the Deluxe upgrade.

5800X3D, RTX4070, 600 Watt, one or two 1440p 32" screens, 64 GB RAM, 4 TB  PCle 3 NVMe, Warthog throttle, VKB NXT EVO stick, Honeycomb Alpha yoke, CH quad, 3 Logitech panels, 2 StreamDecks, Desktop Aviator Trim Panel. Crystal Light VR.

 

I bought my upgrade from Standard to Premium Deluxe some 5 months ago for around €60,

It's the Store version.

It's more than worth the investment, in my case because of the additional aircraft, the 787-10, the Baron 58, the clockwork C172...

A bargain for anyone who didn't invest in it right from the start.

There is yet another advantage - the cheaper quality addons like the ATR I bought for a marginal €12 !

I took advantage of an upgrade discount offered within the marketplace a couple of months back.
