Cockpit camera's jerking is driving me mad!!

But! I think I found a solution. This is an intermitant problem but once it starts my only recourse was to completeley reinstall MSFS! Which quite frankly is a pain in the ****.

So after my third reinstall this week I tried somthing different, I switched on DX12 and bingo jerks gone, I did turn down my settings however but so far so good no jerks and visuals ok.

I'm glad you managed to solve "it". And I say "it" because it's not clear to me what the issue is. Not perhaps camera shake \9which can be toggled on or off)?

a complete reinstall is rarely needed.

To be honest, I prefer DX12, but there are pay-ware planes that will not run in DX12. (the Kodiak for one, at least it didn't a few versions ago)

MSFS2020 has no head shake by default or anything good. you must use FSRealistic to get that stuff!!

Speaking of cockpit camera jerking - Ages ago I purchase somebodies P-38, it was fine until, I think it was the second update, they baked in a new cockpit vibration. I flew it about 10 minutes, trying to figure it out, finally decided it was baked in, so I just deleted it from my drive.

I hate to say this ... but the process of switching to DX12 might have simply deleted/remade your cache. You may find that if you switch back to DX11, your stutters will have gone as well.

That was exactly my first thought. The "jerks" may be caused by scenery loading or parsing on the CPU or GPU. They do some clever tricks with caching and keeping only the necessary stuff in the RAM or VRAM or on the disk.

Many "solutions" work essentially like switching off and on, the famous computer science advice.

This happened to me while trying to use FSRealistic.  I simply could not get rid of the massive stutter even with all of their settings off.  Seriously, the actual planes nose was jumping from left to right by 3-4 feet every few seconds while turning during the taxi.  Of course I un-installed and all is smooth again.  Very strange.

Try setting Off Screen Terrain Pre-Caching to Ultra. I had major stutters when panning around with this set to High, but after changing it to Ultra the stutters have disappeared when panning around the cockpit.
