You don't have to turn your wifi off. Just go to the general options/data and switch off online functionality. Then enjoy a 2006 sim because they won't be any satellite imagery anymore. Base layer is on your computer, Bing online scenery is streamed and cached, and custom scenery objects are again on your computer (like World Updates or purchased scenery packs..).
