Some more post-WWII planes would be great:

 

Cessna 120/140/170/180/195 or straight-tail C172/182 for example... They have been done by some lesser-known developers but they kind of lack the polish and shine of the established developers.

Iris did release an exterior model recently that looks pretty nice.

 

Hopefully, if they do release it, it doesn't have a dumbed down FMS like their PC-21.

I've been hoping for a Velocity.  It's a cool kitplane that appears at airshows, and it has outstanding performance.  I'd love an artist like Lionheartcreations take on that project.  He is so good at sculpting GA aircraft, I have the Epic LT and it's a fun aircraft....  A fixed gear and a retractable model would be great!

A DHC Beaver! The stock one kinda sucks visuals wise and I haven't seen a single properly done payware so there you go... Harrison Ford has a beautiful one btw!

The a380 absolutly deserves a good payware quality version.

Even though there are a lot of airbus haters (really don't see why, but hey) it is a milestone in aviation.

Systemwise it's a lot more complex then the a320/330 family.

C172 has been taken care off by now splendidly, I'd say.

 

That's leaving a lot more that would be almost instant money-sinks from my perspective:

 - Soccata TB10 and/or TB20

 - Cessna 195

 - DC3 (the freeware one is pretty good though, but an accusim-level one would be awesome)

 - Messerschmitt Bf-108 Taifun!! Have to check out the classics-hangar one.

 - Second the Grumman Tiger (or the Cheetah)

 - A accusim-level V-tail Bonanza, 'nuff said...

 - Is there any Seneca out there that can be taken seriously?
