It's less now about "trust the science" than it is "trust the orthodoxy." Anyone questioning the current orthodoxy is branded a heretic and gets hit with the modern version of the Spanish Inquisition.

About the only science involved in many of these issues is the science of public relations. Manipulation of the masses. 

"Studies show..." Whenever a study is commissioned, it is not to determine the truth, it is to prove whatever is requested by the people funding the study. If you don't find the "correct answer", you won't get any more research grants.

Diabetes: Almost all artificial sweeteners are more hypoglycemic than table sugar. Except stevia (100% pure stevia, not the stevia mixed with with trash like maltodextrin, glucose, inulin, erythritol. Because the idea is reduce hypoglycemia, not increase it). The simple cure is to use 100% stevia which is found in most supermarkets or amazon, walmart, etc. Stevia is a sweet plant substance, not an artificial created sweetener. The best science is natural science.

Seed oils are dangerous, and yes they too cause diabetes among other serious diseases. Stay away from them. The simple cure is to use olive oil, found in all supermarkets. Olive oil is not steam pressure made, just simple pressing. And don't be afraid of moderately small amounts of eggs, meats, fat, etc. They aren't seed oil terrible, just need to not over indulge.

And like the good doctor said, keep carbohydrates down to a reasonable level.

I have been privileged to know several PhDs outside of academia. They were all regular people. Some joke about their education. While pushing a cart of computer listings down the hall: "If my thesis advisor could only see me now." Some others try to keep their PhD a secret. One guy got his PhD in EE during the vacuum tube days and was the most interesting. I dearly loved working with him. And some are philosophical: "The PhD is largely a measure of one's capacity to endure boredom." I used to ask them what was the most valuable thing they learned. One guy said to always check the copyright date, as it largely influenced what was written. Another guy said it was learning to touch type. One common factor is that all these people were well grounded.

Inside of academia I wouldn't be surprised to learn many of these people were not the most sterling examples of humanity. But I've never known any, just heard stories. I'm going to guess that constantly being in intense competition with other PhDs has considerable effect on one's confidence and personality.

I believe you mean hyperglycemic (aka: high blood sugar)

Hypoglycemic is low blood sugar.

It's easy to get them transposed.

While hyperglycemia is without question a bad thing, hypoglycemia is statistically more dangerous because it can easily cause one to fall into a coma. I'm annoyed when my Dexcom 3 alerts me that my blood sugar is dangerously low, but also grateful to get that warning!

I keep certain foods around for such incidents, such as cannoli's, cream-filled Bavarian's et cetera.

I have known many PhDs myself. Most of them semi-jokingly refer to them as "Piled Higher and Deeper" degrees. Thankfully I opted for a ThD, which is fairly rare and thus not subjected to such sophomoric humor. 😉

No, Charlie, don't do that. Martin can sometimes be annoying but he's harmless, like a gnat in your face. And he often posts good stuff. We'd miss him if he was gone.

He's nothing like some other people, who are like the Slinky toy. Not useful for anything but it makes you smile to see them tumble down a flight of stairs.

Because of their choices and the luxury increase in food production due to science.  If I go out and eat 5 lbs of meet from my local cow slaughter house every day I’m going to get obese.  If I eat 10 pineapples a day and 10 apples every day I’m going to get obese.  You’re confusing food accessibility with food product.  Even homeless don’t starve, we don’t have a starvation problem in the US.

Wow, tin foil hat time … so why are you typing on this forum?  A LOT of science made this forum a reality.

So you admit you don’t discover information from any source(s) you magically don’t trust based on what exactly?  Like I said, look at the references for the data provided, research those references, discover how the testing was done … if you don’t make an attempt, then your concept of “I just believe” if pretty pointless along with decisions you make or don’t make.  That’s why these articles have “references”, so people can research and validate or invalidate.
