I have lost the icon for the shortcut to running MSFS2020

Just wondering if there is a method to restore the shortcut icon as all I now see is a white 'box'.

You could try a reinstall. With all the files already on your computer it shouldn't take more than a heartbeat.

Or if you have SFUIPC they have a batch file in their directory that starts MS2020.
