Why on earth would one put an eclipse in a flight sim, or is this just the usual trolling??

“Put” is the wrong idea. In our flightsim, if seasons, lunar activity and sun activity are a true thing, then the eclipses would happen “organically” within the sim. All this because the moon and sun interact with the world that we are flying over. 
 

It would pretty much showcase the coding and design of an active earth, sun and moon relationship within the sim. Instead of faked stuff.

given the effort that has gone in to celestial navigation generally, they would probably take a bug report if it doesn't "just work"

If it isn't in X-Plane, submit a bug report, and they might be able to do it.

By the same token, why should I care for cars on roads, peolple inside the airport, and other nit-picky features ... 

It's just a feature, and it could mean a realistic representation of the main astronomical companions of our Earth, and a total eclipse does impact aviation because of the obscuration and temperature variation, although those aren't hugely important factors for IFR fights...

But I ended up finding  out that actually someone at the LR team did care to represent it, but they're too busy with 12.1, and that is more than acceptable:

Watched it in MSFS, really impressive I thought.

I think your response is trolling in itself.

Considering flight sims model the moon and sun, why would you not expect the moon to pass in front of the sun?
