Heading Select as its name implies always follow selected heading, if you have some doubts the manuals are there to be readed and pdf readers have search options to make things easier. To the topic starter you can open a ticket on PMDG Support desk.

The horizontal stabilizer trim move the whole horizontal stabilizer(the rear smaller wing). The horizontal stabilizer doesn't have trim tabs, it has balance tabs to assist the elevator. The vertical stabilizer is the one that have trim tabs.

You are right, i have seen that when i'm descending with tailwind, the aircraft go off path and i have to apply speed brakes to go back on path.

Speed Brakes are not Required if you are flying within VNAV PATH as it is calculated with speed brakes down. But when ALT Restriction are so closed that the current drag is not enough to comply with the restriction the Speed Brakes will be needed.The descent rate with speed brakes up will depend on aircraft Gross Weight. The best way to descent when ATC doesn't give your descent clearance at T/D (i haven't seen this on fsx) is to select DES NOW on VNAV DES page if you are before T/D (it will descent at 1000ft/m to intercept VNAV PATH. If ATC request you to expedite your descent this is not an option) or Descent as fastest as you can go (no need to use speed brakes) if you are after T/D until intercepting VNAV PATH.

Legal remaining fuel after landing?
Different Airlines Standard Operating Procedures, so that depends on what Airline SOP you select to proceed by, but in general you should land at your destination airport with Alternate Fuel (+ Holding Fuel if you didn't fly a holding). The PMDG tutorial will help you with that.

The references i gave you are from the 737 Flight Crew Operations Manual (FCOM), i think it says NGX FCOM, not from the Introduction Manual. As the FCOM i have is not the same as the PMDG one, i cannot give you a page. I'm not at work right know so i can't write here what it says, but if you still cannot find it, tomorrow i will write what it says when i arrive at my workplace.- No VS speed readout on take-off
you can also set the V-speeds manually without FMC with the Speed Reference Selector (SPD-REF knob), check FCOM (10.16) Flight Instruments, Displays chapter, EFIS Instruments (PFD) - Controls sub-chapter for system description and FCOM (SP.10) Supplementary Procedures chapter, Flight Instruments, Displays sub-chapter for normal operation. Page title is Setting Airspeed Bugs with No Operative FMC (Manual Airspeed bug setting). i cannot say page cause the FCOM i have (BBJ) differs slightly from the NGX FCOM.- New autopilot engegement
it isn't a requirement to have the current heading on HDG SEL window prior to selecting HDG SEL, pilots constantly align the HDG SEL with current heading so if LNAV disconnect they can continue on HDG SEL without having to select current heading first and then select HDG SEL. Then they reselect LNAV when LNAV problem has been resolved. Is true that the ngx turn aggressively when HDG SEL is selected with another heading than the current one. So cagrikartal request is valid.- A little bit of "Thank You."

No, Iccccie is right, when the localizer is tuned on Nav 1, the left ND VOR1 station and dme are dashed, and the localizer station and dme are only displayed on the PFD upper left corner, the same happens on the right side. look at the picture below.
