I was actually going to come back here and suggest just this. There is actually a pretty good scenery available for it as well. I can attest, this place is beautiful IRL.

Here's an off the wall suggestion.  Try KLGU in UTAH. Flightsim.to has an excellent freeware mod.

FADS in South Africa. The Cape Town Region imo is the most beautiful flying region I have found in MSFS so far.

Other than that I also fly where I live, but it's propably not so interesting for other people.

FADS [De Doorns] - I would second that - my home region. And Africa haven't had a World Update yet - go figure !.

This whole region together is not large at all. A compact layout of the best scenery on Earth.

 

I like this topographic map of thermals which can be injected by Kinetic Assistant.   It gives a good ideas of the topography of the area.
