Regarding the disabling of aircraft I did manage it through editing of Content.XML, at least for the default Beechcraft 350i which I replaced by a mod of the FS 2020 version.  Have you tried editing Content.XML and add "disabled" tags to the aircraft you don't want to see listed?

Where is that content? I can't seem to find it :(

Yes, and IT WORKS! I removed EVERYTHING leaving only the A310 (for a test) and the sim works normally without any issues. This is a game changer! Thanks a lot!

Now to try and solve the rest of my... er... "issues" :)

Absolutely. Beta tests are a bug finding and elimination process.

There is a big game in beta right now, and I know that the beta version has more bugs than the internal build has, with certain bugs already fixed even before the beta went live. I know it won't make sense to the user why that should be, but there are reasons why a beta can be even more buggy than internal builds. I don't have all the answers, because I'm not a developer myself, but I think sometimes it's to make sure broken code isn't interacting in some negative way with something else, or to see if the bug behaves differently on live servers with many players, before the existing internal fixes officially go into a full build.

Not to keep below 12GB specifically. The goal was to reduce GPU load and temperatures on long flights - especially on warm days.
