From other screenshots it appears that you can select your pilot's avatar and whether to have a co-pilot or not, so toggling them off could certainly be an option as well. I wonder if we'll be able to choose passengers when selecting the payload as well.

If they are going to have a pool of models shared between all aircraft, there is plenty of room for variety (different skin tones for example).
