That would be a ballsy move. The reference data is (allegedly) difficult to obtain and it's more complex systems-wise than the A32x and A330/A340.
Would be great to get an entirely new airliner though.

Prosim 737-800 and Max.  The Demand for Fenix MSFS versions would be absolutely massive at anywhere around A320 cost. We're talking Mega sales.  And Pmdg would have to lower their price substantially.

Like Afghanistan is called the "Graveyard of empires", due to many large countries failing to impose a rule ( British Empire, Soviet Union, the US ), the A350 (and A380 as well) is the "Graveyard of developers", because its systems are the next level of complexity compared to the A32x, its AOM is scarily long at thousands of pages and not as easy to get, and it will be extremely easy to underestimate how much time it will really take, considering there isn't a "Prosim A350" Fenix could start from, it will likely have to be made from scratch, and you'll bankrupt in the meantime. It's THE Graveyard, after all.

That's assuming making a product with the same fidelity as the Fenix A320. An average A350 is more feasible, but I'm afraid it won't have what makes the A350 exciting: the next-gen avionics and UI.

Personally I always liked the A319. But if it has to be a new plane, I guess from a marketing point of view the A350 would make sense. Or a regional jet.

Not only would PMDG have to lower their price they  would also have to up the quality and start communicating with their customers in a true duplex fashion.

A350 would be the next choice for them push the envelope guys.

I’m hoping the A321 is next followed by the A319.  I love both but there’s just a lot more A321s around these days.
