This scenery looks so amazingly realistic, I actually feel sorry for the poor NPCs doomed to sit at the bar and walk around Burger King for eternity.

Absolutely amazing and certainly one I will be getting. But I still cannot fathom out why so many developers these days put so much work into creating areas of an airport that a pilot never sees when inside an aircraft, like the terminal interiors and shopping areas.

I'm of the same thought but I do understand developers point of view as well. These guys are artists and this is their craft. Some people also like to do the full experience or going through an airport, boarding the aircraft etc and this caters to them. I only get the benefit of what I can see from the aircraft but really appreciate the extra details you can see through the windows from the stand such as people walking back and forth, interior modelling such as shops and restaurants and the accurate lighting which really brings an airport to life.

Because that's what players expect, it's the new standard. It's easier to sell and advertise a beautiful, detailed scenery. Players actually look around now with easy access to free cams, not sit static in their aircraft, exact reason why so much of the world outside the cockpit is so detailed. You have addons like FSRealistic with walk-around modes. You also see YouTubers and other content creators do beautiful videos that include all those details. I think this idea of everything outside the cockpit just has to be a hollow facade or not rendered is a bit archaic at this point.
