Personal preference. If a driver works and you have no issues, why update?

There is a changelog for each driver. If you see something useful for you, update, otherwise you can keep the (reasonably) old drivers.

Follow MrFuzzy!  A completely logical answer and all you need.  The only other time to consider it is if Nvidia advise you to update due to security issues with an older driver.

Of course it may depend on what else you do with your PC. Mine is for hobbys, work, gaming, watching TV etc etc. With that in mind I personally like everything to be up to date.

My motto for years has never got me into trouble, " If it ain't broke, don't fix it".

I update 2-3 days after a driver is released. If there's something wrong with it, it will be found right away. And it's not like I'm burning a bridge, I can always revert to an older version if the newest gives me problems.

I have a bunch of games so I prefer to always update. If there is an issue I revert. No big deal.

I will update if there is something in the release notes that I think may be useful, otherwise I will wait a few days to see if anyone has any issues.

What the others said.  I check a new release to see if there's anything for flight sim in it.  If not, I tend to keep a driver that's working well.

A caveat to this, is....in recent months I have updated drivers more often than usual (for me), because of the recent DLSS advancements...but USUALLY in normal times I'm of the mind "if it ain't broke don't fix it."

Absolutely not essential. My philosophy is "if it ain't broke, don't fix it", and it has served me well over the years.

If you are using DLSS then IMHO you need the latest drivers and DLSS file. However, the exception to this is the very latest 572.83 Nvidia driver which (a) Never installed correctly and (b) Gives me a black screen when entering MSFS to fly.
