This looks absolutely stunning but I have been having major difficulties as a 1st-timer with my 2 poor attempts at installing this bad boy.  

Would anyone have a YT step-by-step installation tutorial for a msfs 2020-only user, preferably with audio?

Plane spotting is finally becoming closer to reality in MSFS with AIG! I'm loving it so far and look forward to seeing the future of it. It has a lot of potential. Airports are slowly coming back to life now.

I wish that MS/Asobo would fix or improve ai traffic handling aka taxi speed, runway line up speed and runway vacating speed for starters.

Tested a bit yesterday. Loaded in EFHK. The airport was almost full with Finnair. Saw DHL 757 pushed back from the gates. Then it rolled towards rw22R. Another 757 iceland air moved towards rw22L. The planes reached the holding points almost simultaniously but right before TO the controller just crashed and the traffic gone...

Another try in KLAX. Traffic loaded but very soon the traffic dissapeared even though the planes were present on the controllers map. I relaunched the controller. Then it looked fine again. Watched a craft departed from the terminal 5 and went around to RW24R. Another aircraft joined the taxi and they both departed. The first one from rw24R the second from rw24L.  

Also observed how the traffic was landing. Many planes did go around but some landed successfully. The taxi speed is slow and due to that arriving traffic goes around. 

Also, several planes were circling by the taxiways and not moving forward.

Think I finally figured out the download process, decided to get get all the airlines so got half of them last night and left the PC on today to complete the download.

I generally fly anywhere in the world at any given time so thought it best to have everything, just hope it doesn't show the MSFS loading too much...!

I have installed OCI and use the Traffic Controller as well

I have installed just a few airlines including Air France an Air Tahiti that runs ATR.

When I am at Tahiti airport there is no ATR whatsoever and nothing is show on the map of Traffic Controller.

I have checked at Charles de Gaulle Airport and here I can see the various Air France aircrafts.

Is it because currently the ATR does not exist in MSFS format or is it because I have miss my install for whatever reason ?

Exactly this. If you want to check which models are already available, head over to the SimObjects folder of AIG over in the community folder. If I am not mistaken, it is mostly A32x, B737 (various variants), A380, B777, E190 (old version), Dash8 Q400 and B757. Not sure about 767, but I guess not yet. 

Personally, I am amazed how much traffic we already get with just those aircraft...

Just FYI, I know you have already tried with an empty Community folder, but it might help others.
Hope you will get yours fixed ASAP.

UPDATE:
The faulty folder on my side was maccosim-egcc version 2.1.0, Manchester airport from Macco Simulations.
Removing it from the Community folder allowed AIM to run flawlessly without the infinite "load configuration" loop.
Then I went on Macco Sim web site and downloaded EGCC latest version, v2.15, installed it back and all is fine.
So make sure to update your addons within the Community folder if you encounter the same issue.

In FSX we had two programs, one that sped up the taxi and vacate speeds and one that sped up ATC monologue so they sounded like in real life. Its almost a necessity when you have lots of AI traffic.
